Seriously! I’ve had enough of this on again off again, warm today snow tomorrow set up we’ve been experiencing.
I know this is New England and it comes with the territory but I’m ready to get back into my consistent outdoor runs; to flex my not so green thumb in attempted gardening and chill on the patio and enjoy the warmth of the sun kissing my face.
Bread pudding when done right is one of my favourite desserts since I had it quite a bit growing up.
This version is made using brioche and croissants in a sweet ackee custard for a rich and decadent treat.

Chiffon pies are an old school dessert; with their signature airy, mousse-like fillings they are light enough to have even at the end of a heavier meal. This ackee version is easy to make, using a no bake press in crust. The flavour of the ackee is mild and nutty with the caramel providing a delicious complement.

This pie is a coconut lover’s dream! Coconut flavour in every bite; the crust is made with coconut oil and the silky custard filling with ackees and coconut milk; it’s all topped off with coconut whipped cream and toasted coconut flakes. Indulgent, yet light on the palate and it’s vegan!
Under the black frosting of the Ackee New Years cake was this Ackee Peanut Butter Crunch Cake, it’s a mouthful to say and more than a mouthful to describe in all its yumminess but I’ll do my best; peanut butter lovers rejoice! This one is for you.
Last week I shared my ackee hot chocolate recipe and earlier this year easy ackee muffins with toasted coconut and white chocolate. I love ackee and white chocolate together, it’s just so good!
Some of my other favourite flavours to combine ackee with for sweet treats are coconut, almond, caramel, maple syrup, honey, Jamaican allspice (pimento) and brown butter (See this recipe for Brown Butter Ackee Bread with Walnuts *swoons* 😍).
But I digress, this is about creamy white chocolate ackee mousse atop a toasted cashew sponge with white chocolate glaze and candied cashews 😊. This brown sugar ackee cake is the same as my Easiest Ackee Cake Ever with dark brown sugar subbed for white. The caramel notes throughout are amazing!
