I had the pleasure of working with Linstead Market Jamaica to shoot an episode of the Jamaican food and lifestyle show: Nyammings.

The best part of this whole experience was getting to see peoples reaction first hand. Everyone on set thoroughly enjoyed all the recipes prepared. Which to me is a huge compliment! Jamaicans can be very hesitant when it comes to trying new foods. Or ingredients prepared in a “non-traditional” ways. So that they tried and then loved everything I took as high praise. There were no leftovers from any dish 😊.

Appetizer

Ackee stuffed saltfish fritters

Ackee Stuffed Saltfish Fritters are one of my favourite appetizers to make. On set I served them with the Linstead Market Jamaica Mango Chutney; a truly delicious pairing!

Main Course:

Next up some Shrimp Penne with Callaloo Pesto. Super easy to make using ackee in place of cheese, it’s dairy free and so friendly to those who are lactose intolerant.

And for the sweet finish, it’s back to my trusty: Easiest Ackee Cake Ever recipe. Between the layers: Linstead Market Jamaica’s Guava Pineapple Jam (my brother’s current favourite with the Mango jam inching up for a close second) and Cream Cheese Frosting covered in unsweetened coconut flakes.
