Ackee cheesecake filling is a versatile add-in. You can use it to make filled muffins, swirled brownies or blondies, thumbprint cookies or for croissants or danishes like the mini ones shown here.
They cute and easy to make too!
- Roll out some store bought puff pastry, danish or croissant dough and cut squares,
- Make the ackee cheesecake filling (the same used in the Ackee Muffins);
- Assemble; bake; done!

I made a rough danish dough for these, but honestly, you can get good quality pre-made dough, so unless you want to embark on a little project I’d say, save yourself the time and buy it ready made.
Once baked, the danishes were drizzled with flat icing, alternately you could dust them with powdered sugar
Ackee Cheesecake Filling
Cream and ackees are a wonderful pairing. This filling is a wonderful add-in for a coffee cake, muffin or pastry.
Ingredients
- 113 g Cream cheese (half a block)
- 100 g Parboiled ackee
- 60 g Granulated white sugar
- 14 g All purpose flour
- 1 to 2 tsps Lemon juice optional
- 1 tsp Vanilla Extract
Instructions
- Combine all ingredients in a food processor, pulse till smooth.
- Alternately, puree the ackee, then cream together the cheese, sugar and flour, when smooth add the ackee, juice (if using) and extract
Ackee Cheesecake Danishes
These cute danishes are easy to make using store bought dough and the silkiest ackee cheesecake filling!
Ingredients
- Puff pastry (or danish or croissant dough)
- 1 recipe Ackee Cheesecake Filling
Instructions
- Roll out prepared dough to about a 1/4 inch thick and cut 3 inch squares
- Tug edges of square out slightly then pull to the centre and press down to secure.
- Proof according to package instructions - usually about 20 minutes to an hour depending on room temperature till puffed up slightly.
- Pipe or spoon cream cheese filling into the centre.
- Bake according to package instructions - or at 375F for 8 to 12 minutes.
- Remove from oven and let cool briefly
- Optional finishing: glaze with melted jam; drizzle with icing or dust with powdered sugar
