Here’s another quick ackee appetizer: Ackee & Saltfish in tortilla cups!

Yes you could technically make your own tortilla shell, but who has time for that? Here I used left over ackee and saltish and multigrain tortilla chip cups. Cilantro leaf for garnish, done and done!

Much like the phyllo cups, I’m not going to beat around the bush. That’s it! It’s fast and easy. Make the ackee and saltfish the day ahead and you’re good to go on the day of to fill the shells, serve and keep it moving! After all, you’ve got lots to do. I’m all for long recipes with lots of steps that’s well worth it all in the end. But some days, simplicity calls and this presentation is inspired by just that.
