Ackee mayonnaise is not your typical flavoured mayo. It’s actually made from ackees and a handful of other ingredients added in, all natural and super easy.
It makes an awesome dip!

How about ackee mayo with some fried green plantains, breadfruit chips or sweet potato fries to name a few. I use it to make my “Chickee” Salad which I do a Vegan version of with chickpeas and a second version with chicken.

I’ve kept the recipe simple, think of this as the starting point. A pinch of cayenne would be a great! Other add-ins such as garlic, herbs or even minced chipotles in adobo for a spicy chipotle mayo dip are all fair game (check out the ackee fritters recipe for that chipotle ackee mayo 😍). Incorporate them after you’ve made the basic recipe, be careful about adding anything that has high water content as this could break the emulsion.

- In a small blender cup or food processor, combine ackees, lemon juice or vinegar, oil and grainy mustard if using
- Pulse a few times till combined, you may notice that the mayo looks like its going to break, this is where the mustard powder comes in, it will at as an emulsifier and hold it all together
- Start adding the ground mustard 1/4 tsp at a time until emulsified, thick and smooth. Though it may seem a bit loose it will thicken up a bit more as it sits
