In Jamaica and much of the other Caribbean islands boiled dumplings are staple for almost any meal especially saucy stews, curries or soup. It’s basically flour and water with a bit of salt kneaded to make a dough that is then shaped into discs and dropped into boiling water to cook.

This creamy, garlicky, ackee eggplant dip was a “stumbled across” recipe. For the most part I have a list of ideas and work from there but sometimes I’ll have bit of ackee left over from a previous recipe and throw it in to what I’m making and that’s how this dish came about.

Creamy Mac ‘n Kees – One Pot Method

Easy, creamy, vegan mac and cheese made in one pot.

This is the dish with which my adventures in ackee began. Here I’m revisiting it but this time around I’ve added coconut milk to the original (Mac ‘n Kees). This makes it extra creamy and I’ve used the one pot pasta method so there’s less mess to clean up.

Easy Jamaican Ackee Fritters

Feather light and chock full of flavour these easy Jamaican ackee fritters are delicious by themselves or dipped. They contain egg whites which makes them light and fluffy but they can easily be made vegan by omitting the egg whites and adding more water or by using aquafaba instead.
