Thoughts of Pina Coladas led me to thinking of some of the variations I’ve seen such as banana and pumpkin.  Naturally I thought: why not ackees? So Ackee Colada was born!

If you’ve ever seen the highly inappropriate but hilarious movie “The Sweetest Thing” there’s a scene where Christina and Courtney (Cameron Diaz and Christina Applegate) call Jane (Selma Blair) who is at work (a call which her boss intercepts and puts on speaker phone) singing yelling: Janeeey!!!! do you like Pina coladas??!? while Escape (The Pina Colada Song) plays in the background. My cousin Tara and I watched this movie easily a hundred times and loved nothing more than catching my younger sister off guard appearing to have a serious question, to only then yell: “do you like Pina coladas????!!” at the top of our voices; which would lead to us collapsing in laughter and my sister rolling her eyes in annoyance that we’d gotten her yet again. But you know what? I do like Pina coladas 😆. 

Besides what better way to cool down on a muggy summer afternoon when adulting is simply not happening and all you want to do is put up your feet?

5 ingredient Ackee Colada

The mild nutty flavour of the ackee is excellent in this cocktail. Did I mention it uses less than 5 ingredients! The ackees are sweetened with white sugar but you could use cane sugar or a liquid sweetener if you prefer. Full fat coconut cream (not milk) is used for richness and white rum to finish although golden rum is also lovely – check out the variations in the recipe below.

By the way the umbrella in the drink makes me feel like I’m taking a mini vacation 😄.

Ackee Colada

Try this variation on the traditional Pina Colada using ackees! Mild and nutty in flavour they’re a delicious pairing with coconut cream and rum

Ingredients
  

  • 1/2 cup Parboiled Ackee
  • 1/4 cup Granulated Sugar
  • 1 tbsp Water
  • 1/4 cup Coconut cream
  • 1/4 cup White Rum
  • 1 cup Crushed Ice approximately
  • splash Angostura Bitters optional

Instructions
 

  • Combine ackees, sugar and water in a small saucepan and place over medium heat. Cook just until the sugar is melted
  • Add sweetened ackee and remaining ingredients to blender and blend till slushy like in consistency
  • Serve & enjoy!

Notes

Variations:
1. Substitute heavy cream for coconut cream and use coconut rum instead of white rum
2. Keep or substitute coconut cream for heavy cream and substitute golden rum for white rum
3. For a lighter version, use half the amount of coconut cream and replace with water or use coconut milk instead of coconut cream
4. Virgin colada: omit the alcohol
